Family owned and operated, Bellwether Farms is located in Sonoma County, California, about an hour north of San Francisco, and a few miles from the Pacific Ocean. Their cheeses are used by chefs in many of the finest restaurants across the country, and are regularly featured in The New York Times, Martha Stewart, Sunset Magazine, and gourmet food publications everywhere. Overall I thought things looked good. I will be happier with my performance with the camera as time goes on. Outside of some rotating, slight exposure and color correction needed, I like the stuff. The camera is dynamite.

It was great to go back and spend the day just putzing around trying different things with the camera. It gave me a much better insight to how I can use it in a variety of situations. It works very well with the Canon lenses we have. I will give you the pros and cons of jumping on to this camera with little time to work with it. For now here is what I have.

Pasta and ricotta were meant to be enjoyed together! Enjoy this quick and easy recipe and taste how the heat from the pasta, slightly melts the whole milk ricotta to perfection.

Seasonal Veggies with Ricotta

The Callahans love to make this dish at home. Diana calls it "Thanksgiving In A Bowl", and was inspired by a recipe from Food 52. Try this dish at home using Bellwether Farms Ricotta.

Lemon Ricotta Pancakes

This is one of Liam and Diana's favorite recipes. Ricotta is a fantastic addition to breakfast foods. This lemon ricotta pancake recipe is light and fluffy and very trendy. Visit Bellwether farms for more recipes.

Blueberry Ricotta Cups

This blueberry ricotta cup recipe is similar to a cheescake without the crust. Dessert is Diana's favorite part of the meal and this recipe was inspired by www.southerninlaw.com's recipe. To add some richness, Liam likes to add a scoop of vanilla ice cream to finish it off.

Aged Cheeses

Not only does Bellwether Farms make incredible ricotta, but their aged cheeses are to die for as well! Aging cheese is all about controlled spoilage, fermenting those milk sugars to create variations in flavor. Those variations are affected by moisture, temperature, age time and more.

Making Cheese

Liam Callahan's hand washing philosophy is serious business and is an essential part step in the process of working with cheese. It allows Liam to work with the cheeses without gloves so that he can feel the firmness of the curds while keeping the product totally sanitized.
