Curtido and Bacon Deviled Eggs

    Ingredients:

  1. 12 eggs
  2. 1/3 cup of curtido + more for garnish (sub kimchi if you prefer)
  3. 1/3 cup of mayo
  4. 6 strips of bacon
  5. 1/4 cup of green onions + extra for garnish
  6. 1 TBSP chopped cilantro
  7. 1 TBSP of Apple Cider Vinegar

    Directions:

  1. Bring water to a rolling boil
  2. Drop in eggs, boil for 9 min
  3. At 7.5 min add TBSP of Apple Cider Vinegar
  4. Put in ice water after 9 min
  5. Cool for 4 min and peel
  6. Slice in half, separate yolk
  7. Chop curtido, mash yolk, bacon, mayo, chopped cilantro.
  8. Fill whites with mixture and garnish with green onion and curtido carrot slice.
