Miso Ginger Macro Bowl

    Ingredients:

  1. 1 cup cooked quinoa
  2. 1 package of extra firm tofu
  3. 2 large carrots
  4. 2 cups spinach
  5. 1 small bunch of broccoli
  6. 1 cup radishes
  7. 1 cup Bubbies sauerkraut
  8. Dressing of your choice (I used Whole Food’s Carrot Ginger Miso)
  9. 1 TBSP sesame oil
  10. 1 TBSP tamari
  11. 1 tsp honey
  12. 1 tsp crushed fresh ginger

    Directions:

  1. Cook quinoa
  2. Lightly oil a baking sheet
  3. Press tofu to remove excess liquid; chop into cubes
  4. Whisk soy sauce, sesame, and ginger in a bowl, and add the tofu; mix until all tofu is covered with the sauce
  5. Bake at 350 degrees for 30 minutes
  6. Chop all veggies.
  7. Lightly saute the broccoli for about 5 minutes
  8. Spoon quinoa into bowl, and then start layering your ingredients on top
  9. Pour the dressing in between layers, and enjoy!
