Sweet Peppers & Garlic in Oil


  1. 1lb of sweet peppers
  2. 1 whole head of garlic
  3. 1 sprig of fresh thyme


  1. Roast the peppers and garlic together at 400 degrees for 25 minutes
  2. Let them sit for 10 to 15 minutes; remove skins and outer parts of the garlic
  3. Layer peppers and garlic with thyme and oil into a mason, making sure to pour a little oil on top of each layer
  4. Tighten up you lid, and place the jar in the fridge to sit for a couple days
  5. After that, they’ll be throughly marinated, and will keep in your fridge for up to 1 month
